Ingredients:
•6 medium yellow potatoes
•1 tablespoon of almond extract
•1 teaspoon of salt
•1 teaspoon of pepper
•1.5 teaspoon of rosemary
•1.5 cup of olive oil
•1.5 cup of sliced almonds

Instructions:
Simply poke each potato several times around with a fork and pop them in the microwave for around 5-6 minutes (until they are soft enough to pierce easily with a fork).
Heat the olive oil in a pan over medium to high heat and slice each potato up. Season your potatoes with the almond extract and seasonings and mix them well until they are evenly coated. Place the potatoes in the olive oil and allow them to crisp up on both sides until they are a golden brown color. Once the potatoes are perfectly crisp, pour in your almond slices and allow enough time for them to toast up.
