


If you want a super simple and fresh, yet immensely delicious lunch for the family - this is it! Chicken salad is one of my husband's favorite types of sandwiches, but this could also be paired with a light salad for a low-carb option or on its own with a few crackers for a little added crunch!
Ingredients:
• 4 Chicken Breasts (I slow cooked these in the crockpot but you could also use 4 cans of shredded chicken)
• 1.5 Cups of Light Mayo
• 1/2 Tablespoon of dried Basil
• 1 Teaspoon of Cracked Black Pepper
• 1/2 Teaspoon of Salt
• 1 Cup of chopped Grapes (we're loading it up with grapes because... YUM)
Directions:
Guys, this is the easiest recipe I will probably ever post. You just mix it all together! When it comes to the chicken, I actually cooked mine in the crockpot for 6 hours on low, shredded it, and stuck it in the fridge to make chicken salad for the next day, but you could definitely use chicken in a can. If you decide on the can option, be sure to hold back on the salt since it will most likely already be salty.
Put this chicken salad on a croissant, over a bed of lettuce, with some crackers or sprinkle some pecans top and you have the perfect, high protein spring lunch!
