

Sweet Baby Rays Parmesan Crusted Pulled Chicken with Creamed Rice and Green Beans

If you know my husband, then you know that Sweet Baby Rays BBQ sauce has to be drizzled over nearly every meal of his. He LOVES his Sweet Baby Rays and if your family enjoys some good pulled chicken, then they will be sure to love this meal as well! (This feed 3-4 normal people or 1 very hungry British husband)
•1 Tablespoon of Olive oil
•1 rotisserie chicken
•Sweet Baby Rays BBQ Sauce (to taste)
•Grated Parmesan Cheese (to taste)
•1 Tablespoon of Butter
•2 American Cheese Slices
•1/4 cup of Shredded Mozzarella Cheese
•1/2 cup of Heavy Whipping Cream
•Salt
•Pepper
•2 cups of White rice
•Green beans
First you are going to prepare your white rice. We have a very simple rice cooker that is used daily in our home from Amazon (Rice Cooker link). Be sure to wash your rice first, cover it in water and pop it in the cooker (following the cooker's instructions).
While your rice is cooking, begin to debone your rotisserie chicken. Sauté the chicken in olive oil over low to medium heat and drench it with the Sweet Baby Rays BBQ sauce. You know how much your family enjoys bbq so play it by ear with how much you think your chicken may need. Next, get your grated Parmesan and sprinkle it all over your chicken. At this point, I will up the heat a little bit and let some of the chicken crisp up in the delicious BBQ Parmesany goodness! And its that simple - your chicken is already done!
Now to work on the creamed rice. Melt your butter in a medium pan over medium heat and then pour in the heavy cream. Once it’s simmering, drop in your cheese and whisk it all together. Add some salt and pepper to taste. Once your rice is done cooking, pour it into the creamy, cheesy sauce and combine until it is perfectly mixed together.
Now with your green beans, I usually make my life easier by popping those in the microwave and then seasoning with butter, salt and pepper (to taste).
Plate it all up for the ones you love and and sprinkle some dried parsley on top (totally optional but you feel more fancy). Enjoy a delicious and easy, yet elevated BBQ plate👌🏼
