

Steak and Sweet Potato Soup (Made in the Crockpot)

Steak and Sweet Potato Soup (in the crockpot)! This soup is sweet, slightly savory and the epitome of heart-warming on a rainy day.

Ingredients for the steak:
•1 lbs steak (I used beef top round steak)
•Olive Oil (to lightly coat the steak)
•1/2 tablespoon rosemary
•1/2 tablespoon of oregano
•1 Tablespoon of Garlic seasoning
•1/2 Tablespoon of Ground Sage seasoning
•1/2 Tablespoon of Salt
•1/2 Tablespoon of Pepper
Ingredients for the rest of the soup:
•3 cups chopped sweet potato
•1.5 cups chopped carrot
•1/2 cup chopped onions
•3 cups beef broth
•1 can (10.5 ounce) of beef gravy
•1 Tablespoon of Worcestershire sauce
•Salt to taste
•Pepper to taste
•1/2 Tablespoon of Oregano
•1/2 Tablespoon of Thyme
•One packet of Sazón Goya seasoning
•1 cup of frozen spinach
•12 oz bag of frozen peas
Instructions:
Start by seasoning your steak with olive oil, salt, pepper, rosemary, oregano, garlic and sage. Sear each side of the steak on high heat on the stove (you just want the steak to be a caramelized dark brown - around 1 min on each side). Once you’re done, put the steak aside, lower the temperature of your stove to medium heat, put a tablespoon of butter in your pan and caramelize your chopped onions. They’re done once they are soft in texture and golden in color.
Next, you want to shop up your steak into bite sized cubes. Put them in your crockpot followed by the sweet potato, carrots and caramelized onions. Pour in the beef broth, beef gravy, Worcestershire sauce, and all of your seasonings (including the Goya seasoning packet). Don’t add the spinach or peas just yet!
This is the easy part! Simply cover your crockpot and cook on high for 3-4 hours or low for 5-6 hours. It only took about 3 hours before my soup was the perfectly cooked through. Keep an eye on your soup toward the end - the last thing you want is for the sweet potato to turn into mush. You still want them to hold their shape. At the very end, add in your spinach and peas and cover again for around 10 minutes for them to cook.
Your bowl full of cozy deliciousness is now ready! Serve your soup to the ones you love with a side of warm sourdough bread on a cozy, rainy day and you are set for a perfect night! 🍲🥕🥄
