

Grilled Halloumi & Sautéed Cabbage with Cashew Curry (Low Carb)

Who doesn't want a lunch that takes under 15 minutes to make and is packed full of curry deliciousness?!
Ingredients:
•1 Tablespoon of olive oil
•1/2 cup of halloumi cheese (4 oz)
•1 Tablespoon of butter
•2.5 cups coleslaw blend (with cabbage)
•6 oz of Coconut cashew curry sauce
Optional (to garnish):
•Salted Cashews
•Salt and Pepper to taste
Instructions:
This lunch is incredibly simple, yet packed with delicious flavor!
Simply pour the olive oil in a pan over medium to high heat and begin grilling the halloumi cheese. I turned mine until each side was dark golden and super crispy!
Next, lower the heat to medium, add the butter and put the coleslaw blend in the same exact pan. Sauté the coleslaw with the halloumi and cover. Allow it to cook through (around 5 minutes) and then pour in the coconut cashew curry sauce. Once the sauce is heated through, you’re done!
Enjoy your lunch with a slice of naan bread or crunchy multigrain chips and there you go! You have a fast lunch with bold flavor and it took you under 15 minutes to prepare! 🙌🏼🎉
