Cinnamon Butternut Squash Salad with Cheesecake Factory Brown Bread Croutons

If this doesn’t scream a salad bowl full of harvest delight, I don’t know what will! I love a good salad with lots of variety. It’s simple and quick to make! 🍁

I won’t share measurements since you can decide how large you want your salad to be🤗


Ingredients: 

•Bed of lettuce of your choosing (I used mixed greens)

•Olive Oil

•Salt & Pepper

•Cinnamon sugar (optional for the butternut squash)

•Sautéed butternut squash (in olive oil, salt, pepper, and cinnamon sugar)

•Shelled edamame (tossed in butter and salt)

•Cucumber

•Poppyseed dressing

•Single serving of Good Culture cottage cheese (great protein)

•A sprinkle of crushed black pepper

•Cheesecake Factory’s brown bread (I find it at Publix)

•Top it off with a dusting of cinnamon, because, Fall👌🏼


Instructions:


Y’all know how to make salad! BUT, I will share that roasted butternut squash in the oven is just as delicious. Sauté or roast them in olive oil until they are to your liking. If you are using a bag of butternut squash or edamame, simply follow the instructions on the bag. I tossed mine in butter, salt and pepper once they were cooked. Now for the absolute best part! The Cheesecake Factory Brown Bread croutons. This bread truly excites my soul. When it comes to making homemade croutons, simply heat up 1/2 tablespoon of butter in a pan at medium to high heat and chop up your bread into small cubes. Turn the pieces occasionally until they are the perfect, crispy texture! I like my croutons with a little chewiness, but some may want them more crunchy - simply toast them up on the pan until they are to your liking! Don’t forget to add the light dusting of cinnamon to your salad at the end! It adds the perfect notes of Autumn warmth. Enjoy!
