

Basil Butter Salmon with Crispy Golden Potatoes and Broccoli

This has quickly become one of our favorite dishes! The recipe is simple and easy to follow, but this salmon will truly fulfill your every desire for a flavorful dinner🤗 Recipe is for 2 (plus a toddler) - Simply double or triple it to feed a bigger table! You’ll need:
•One fresh packet of salmon (we usually buy the 2 portion MOWI Atlantic Salmon 12 oz)
•4 Tablespoons of Salted butter (for 2 pieces of salmon)
•Olive Oil
•Basil seasoning
•Salt + pepper
•Garlic seasoning
•Golden potatoes
•Broccoli
Directions:
Set your oven to 400F. Get a pan (I always use a sheet of aluminum on the pan for easy clean up) and place your pieces of salmon on the pan. In a separate bowl, put 4 tablespoons of soft butter in it and mix in basil, salt and pepper - all to your liking! Baste your salmon in the butter mixture and place it in the oven for 20-24 min (follow your salmon packet for accurate cooking instructions).
Meanwhile, grab as many golden potatoes as your heart desires, rinse them off and pierce each one all around with a fork. Pop those in the microwave until they are immensely soft (you don’t want al dente). Heat a large pan on the stove at medium to high heat with enough olive oil to coat the bottom of the pan. Add in some salt, pepper and garlic seasoning (to taste). Slice each potato up and place them in the pan. Allow their golden deliciousness to sizzle and turn them every so often until they are nice and crispy!
Cook the broccoli however you like - in the oven, sautéed on the stove OR go ahead and use your microwave. Toss it in butter, salt and pepper and you have the perfect side veggie! Although this is a very simple recipe, it is absolutely delicious! The butter causes the salmon to simply fall apart and the crispiness of the potatoes adds the perfect crunch.
Once everything is finished and to your liking, place it all on a plate and serve it to the ones you love!
